1Birdland (バードランド)
Order this: The tsukune (chicken meatball) with raw egg yolk dip is their signature. Follow it with negima (thigh and scallion) and the chicken liver, which is seared rare. Skip the breast cuts, they're fine but not what makes this place special.
Reservations are essential, call at least a week ahead. It's in the basement of the Tsukamoto Sozan Building near Ginza Station. Counter seats are the move so you can watch the chef work the binchōtan grill. Order a beer first, then your skewers. Each piece comes one at a time, eat it immediately while it's hot.
2Sushi Saito (鮨 さいとう)
Order this: Chef's omakase only, around 20 pieces. Don't ask for soy sauce, the chef seasons each piece for you. The otoro, kohada, and uni are the highlights. The anago (sea eel) at the end is brushed with a sweet glaze that will stay with you.
Three Michelin stars, 8 seats only. Book through your hotel concierge months in advance, they don't take direct reservations from foreigners. Eat each piece within seconds of receiving it, the rice is body temperature and starts to cool immediately. No cologne or perfume. Say “gochisousama deshita” (thank you for the meal) when leaving.
3Fūunji (風雲児)
Order this: Tokumori (extra large) tsukemen with ajitama egg add on. The thick fish and pork dipping broth is intense. When you finish the noodles, ask for “soup-wari” and they'll dilute the remaining broth into a hot drinkable soup. Don't skip this part.
Buy your ticket from the vending machine outside before entering. The top left button is the signature tsukemen. Hand your ticket to the staff when you sit down. Slurping loudly is expected and shows you're enjoying it. There will be a line but it moves fast, expect about 20 minutes. Open until 11 PM so this is a perfect late night stop.
4Albatross G (アルバトロス)
Order this: A highball (whisky soda) and whatever small plate the bartender recommends. The food is secondary to the experience here. If you want something to nibble on, the edamame or dried snacks are the way to go.
There's a ¥500 to ¥1000 seating charge (otoshi) per person. This is normal in Golden Gai, not a scam. Albatross is one of the more foreigner friendly bars so it's a good place to start. Three tiny floors connected by a spiral staircase. Keep your voice down. If a bar has a “members only” sign, don't go in. Otherwise peek in, make eye contact, and the owner will wave you in or shake their head.
